I discovered Angela’s blog OhSheGlows (http://ohsheglows.com/) and it is a wonderful resource for vegan recipes! I’ll share two dishes I’ve cooked using her recipes. Of course I’ve used many of them.

Roasted Butternut Squash Almond Pecan Parmesan

I cut the kale into small pieces.

I sprinkled the kale on the cubed butternut squash and put it in the oven. Salt, pepper, olive oil and minced garlic were all sprinkled on the kale and butternut squash.

I added the pecans and put this back in the oven and it was done! Total oven time is about 50 minutes. This dish was delicious!

I won’t bore you with the details. Here’s a slice of the delicious lentil walnut apple loaf I made. I substituted some of the ingredients. I used almond meal instead of oat flour and I added oats instead of breadcrumbs. This meal was delicious! Thanks to OhSheGlows! Check out her website!
